Easy zero-carb flatbread recipe without flour

Easy Zero-Carb Flatbread Without Flour

This is a simple, flourless flatbread made with eggs and mozzarella cheese. It is soft, flexible, and useful for wraps, kebabs, or sandwiches.

Preparation time: 5 minutes Cooking time: 6–10 minutes Yield: 2 small flatbreads

Ingredients

  • 2 large eggs
  • ½ cup (50–60 g) shredded mozzarella cheese
  • 1 small pinch of salt (optional)
  • ¼ teaspoon garlic powder (optional)
  • A little oil or butter for greasing the pan, if needed

Important: For the simplest version, use only eggs and mozzarella. No wheat flour, almond flour, coconut flour, or baking powder is needed.

Detailed cooking method

Step 1: Prepare the mixture

  1. Crack 2 eggs into a medium-sized bowl.
  2. Beat them with a fork or whisk for about 30–45 seconds until the yolks and whites are fully combined.
  3. Add the shredded mozzarella cheese.
  4. Add salt and garlic powder if desired.
  5. Mix everything thoroughly.

The mixture will be runny, unlike traditional bread dough. That is normal.

Step 2: Heat the pan

  1. Place a nonstick frying pan over low to medium-low heat.
  2. Lightly grease it with a few drops of oil or a small amount of butter if necessary.
  3. Allow the pan to warm for about 1 minute.

Avoid high heat because the eggs may burn before the flatbread cooks through.

Step 3: Cook the first flatbread

  1. Pour half the mixture into the pan.
  2. Gently spread it into a thin, round shape using the back of a spoon.
  3. Cook for approximately 2–3 minutes.
  4. Wait until the bottom is golden and the top is mostly set.
  5. Carefully slide a thin spatula underneath and flip it.
  6. Cook the other side for another 1–2 minutes, until fully cooked.

If it breaks when you flip it, let it cook for another 30–60 seconds before trying again.

Step 4: Cook the second flatbread

Repeat the process with the remaining mixture.

Let both flatbreads rest for about 1 minute before folding or rolling them.
