Zucchini, Potato Carrot Cheese Muffins

Ingredients :

1 grated zucchini1 grated potato1 grated carrot 2 eggs1 cup shredded cheese (mozzarella or parmesan)1 cup all-purpose flour1/2 cup vegetable oil1 tablespoon baking powderSalt and black pepper to taste Fine herbs to taste (optional)

Préparations :

01 -> Preheat the oven to 180°C (350°F) and grease a muffin tin or line with paper cups.02 -> In a bowl, combine the grated zucchini, potato, and carrot.03 -> Add the eggs and oil to the vegetable mixture and mix well.04 -> Stir in the shredded cheese, flour, baking powder, salt, pepper, and herbs (if using). Mix until well combined.05 -> Spoon the batter into the muffin cups, filling them about 2/3 full.06 -> Bake in the preheated oven for about 20 to 25 minutes, or until the muffins are golden and firm to the touch.07 -> Remove from the oven, let cool slightly, and serve!
