Vibrant Brunch Plate with Sunny Side Up Eggs Grilled Corn and Fresh Fruit


Ingredients:
✅ 2 large eggs
✅ 1 avocado, sliced
✅ 1 cup cherry tomatoes (mixed colors if possible)
✅ 1 cup fresh blueberries
✅ 2 slices whole-grain or sourdough bread
✅ 2 small corn cobs, halved
✅ Olive oil or butter (for frying)
✅ Salt & pepper
✅ Chili flakes (optional)

Instructions:
1️⃣ Grill the Corn 🌽

Brush corn cobs with olive oil.

Grill on a grill pan or outdoor grill until charred in spots, turning occasionally (about 8–10 minutes).

Season with salt.

2️⃣ Toast the Bread 🍞

Toast the bread slices until golden and crispy.

3️⃣ Cook the Eggs 🍳

Heat a little butter or oil in a nonstick pan over medium heat.

Crack in the eggs gently.

Cook sunny-side up until whites are set but yolks remain runny.

Season with salt, pepper, and optional chili flakes.

4️⃣ Prepare the Veg & Fruit 🥑🍅🫐

Halve the cherry tomatoes.

Slice the avocado.

Rinse the blueberries.

5️⃣ Assemble the Plate 🍽️

Place the eggs in the center.

Arrange toast, avocado, grilled corn, cherry tomatoes, and blueberries around the eggs.

Drizzle a little olive oil over the tomatoes and avocado, if desired.
