Ingredients:
1 large baguette or Italian loaf
3 ripe tomatoes, finely diced
4 cloves garlic, minced
1/4 cup fresh basil leaves, chopped
1/4 cup grated Parmesan cheese (optional)
1/4 cup olive oil
1 tablespoon balsamic vinegar
Directions:
Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
Slice the baguette in half lengthwise, then cut each half into smaller pieces if desired.
In a bowl, mix the diced tomatoes, minced garlic, chopped basil, olive oil, and balsamic vinegar. Add salt and pepper to taste.
Place the bread slices on the baking sheet and toast in the oven for 5–7 minutes until lightly golden.
Remove the bread and spoon the tomato mixture generously on top of each slice.
If using, sprinkle grated Parmesan cheese over each piece.
Return the bread to the oven for an additional 5–7 minutes, or until toppings are heated and cheese is melted.
Serve warm, garnished with extra basil or a drizzle of balsamic glaze if desired.
