This Apple and Sultana Cake Delight is perfect for a cosy afternoon

! Easy to whip up, it’s a sweet treat the whole family will love. Give it a go this weekend!
Ingredients:

  • 3 medium apples, peeled, cored, and diced
  • 225g unsalted butter, melted
  • 220g granulated sugar
  • 50g light brown sugar, loosely packed
  • 2 large eggs, beaten
  • 150g sultanas
  • 1 tsp ground cinnamon
  • 1 tsp baking powder
  • Pinch of salt
  • 200g self raising flour

Directions:

  1. Preheat your oven to 180°C (350°F) and grease a cake tin. 2. In a large mixing bowl, combine the diced apples and sultanas. 3. In another bowl, whisk together the melted butter, granulated sugar, brown sugar, and beaten eggs until well combined. 4. Slowly fold the dry ingredients (flour, cinnamon, and baking powder) into the wet mixture. Add a pinch of salt. 5. Gently mix in the apple and sultana mixture. 6. Pour the batter into the prepared cake tin. 7. Bake in the preheated oven for about 45-50 minutes or until a skewer inserted into the centre comes out clean. 8. Allow to cool before serving.
