Super Fresh Grilled Halloumi Greek Bowl with Creamy Tzatziki & Rice

Ingredients:
Halloumi:
200g halloumi cheese, cubed
1 tbsp olive oil
1/2 tsp oregano
Black pepper, to taste
Tzatziki Sauce:
1/2 cup thick Greek yogurt
1/4 cucumber, shredded and drained
1 small garlic clove, minced
1 tbsp chopped dill or mint
1 tsp lemon juice
Salt and pepper
Greek Salad:
1/2 cucumber, thinly sliced
1/2 cup cherry tomatoes, halved
1/4 red onion, sliced
1/4 cup Kalamata olives
1 tbsp olive oil
1/2 tbsp red wine vinegar
Oregano, salt & pepper
To Serve:
1 cup white rice, cooked
How to Make It:
Fry halloumi cubes in a skillet with oil, oregano, and pepper until they’re golden. Mix all tzatziki ingredients in a bowl (make sure to squeeze cucumber well). Toss the salad ingredients with oil, vinegar, and seasoning. Build your bowl with rice, salad mix, a scoop of tzatziki, and warm grilled halloumi on top.
Tips & Options:
Try with bulgur or farro instead of rice.
Add roasted red pepper or hummus for variety.
Perfect vegetarian lunch or light dinner.
