Sunny Side Eggs with Avocado, Mushrooms & Tomatoes

Ingredients (1 serving):

2 eggs

1 slice bread (toasted)

½ avocado, thinly sliced

½ cup mushrooms, sliced

1 small tomato, halved

1 handful fresh spinach or greens

1 tsp olive oil or butter

Salt & black pepper to taste

Fresh parsley for garnish


Instructions:

  1. Toast bread – lightly toast your bread until golden.
  2. Cook mushrooms – sauté sliced mushrooms in olive oil with a pinch of salt and pepper for 3–4 minutes.
  3. Fry eggs – in a pan, cook eggs sunny side up with a little oil/butter until whites are set but yolks remain runny.
  4. Assemble plate – place toasted bread with fried eggs on the side. Arrange avocado slices, fresh spinach, sautéed mushrooms, and tomatoes.
  5. Finish & serve – season with salt, pepper, and fresh parsley. Optionally drizzle with balsamic glaze or olive oil.
