Spinach Pasta Salad with Feta & Cranberries

Light, fresh, and Mediterranean-approved!

Ingredients:

8 oz (225g) pasta

3 cups baby spinach

½ cup dried cranberries

½ cup crumbled feta

¼ cup chopped walnuts or pecans

¼ small red onion, thinly sliced

3 tbsp extra virgin olive oil

Instructions:

Cook pasta, rinse with cold water, and drain.

Toss pasta with spinach, cranberries, feta, nuts, and onion.

Drizzle with olive oil and mix gently.

Tip: Add a squeeze of lemon for brightness!
