Ingredients:
1 lb cooked, shredded chicken
1/4 cup creamy peanut butter
2 tbsp soy sauce
1 tbsp rice vinegar
1 tbsp honey
1 tsp sriracha (or more to taste)
1–2 cloves garlic, minced
1 tsp grated fresh ginger (optional but adds zing)
1–2 tbsp warm water (to thin sauce)
Butter lettuce leaves (or romaine)
Toppings: shredded carrots, chopped peanuts, green onions, cilantro
Lime wedges (for serving)
Instructions:
Make the sauce: Whisk together peanut butter, soy sauce, vinegar, honey, sriracha, garlic, and ginger. Add water slowly until smooth and slightly runny.
Toss chicken in sauce until evenly coated.
Spoon into lettuce leaves. Add toppings: carrots, peanuts, green onions, cilantro.
Serve with lime wedges. Done!
