🥚 Ingredients:
3 eggs
1 ripe avocado (halved)
1 cup broccolini or small broccoli florets
1 small zucchini (sliced)
2 cups mixed greens (arugula, lettuce)
Olive oil
Salt & pepper
Chili flakes (optional)
🔥 Instructions:
1️⃣ Bring water to a boil. Gently add eggs. Boil 6–7 minutes. Cool in ice water. Peel.
2️⃣ Heat olive oil in a pan. Sauté broccolini and zucchini until tender (about 5 minutes). Season with salt, pepper, chili flakes.
3️⃣ Arrange greens on a plate. Add sautéed veggies.
4️⃣ Place avocado halves (sprinkle with salt, pepper, chili flakes).
5️⃣ Cut eggs in half, place on plate.
