Ingredients:
🥚 2–3 eggs
🥦 1 cup broccoli florets
🍠 1 medium sweet potato, sliced
🧂 Salt, pepper, olive oil
🔪 Instructions:
Roast the sweet potatoes:
Toss slices with olive oil, salt & pepper.
Roast at 200°C (400°F) for 20–25 min.
Steam the broccoli:
Steam for 4–5 minutes until tender-crisp.
Season lightly with salt.
Boil the eggs:
Bring water to a boil, gently lower in eggs.
Boil for 6–7 minutes (for soft yolk).
Cool under cold water, peel & halve.
Serve:
Plate everything together.
Add a pinch of pepper or herbs if desired. 🌿
