Smoky Jalapeño Popper Soup with Grilled Chicken


Ingredients:

  • 1 lb Grilled chicken breast, diced
  • 1 tablespoon Olive oil
  • 1 medium Onion, chopped
  • 3 cloves Garlic, minced
  • 2 cups Chicken broth
  • 1 cup Cream cheese, softened
  • 1 cup Shredded cheddar cheese
  • ½ cup Jalapeños, chopped (fresh or pickled)
  • 1 teaspoon Smoked paprika
  • Salt and pepper to taste

Directions:

  1. Heat the olive oil in a large pot over medium heat.
  2. Sauté the chopped onion and minced garlic until they become soft and fragrant.
  3. Add the diced grilled chicken, jalapeños, and smoked paprika, cooking for a few minutes.
  4. Pour in the chicken broth and bring to a gentle simmer.
  5. Stir in the softened cream cheese until it’s fully melted and blended.
  6. Add the shredded cheddar cheese, seasoning with salt and pepper to taste.
  7. Let the soup simmer for 10 minutes, then serve it hot.
