Ingredients:
- 1 lb Grilled chicken breast, diced
- 1 tablespoon Olive oil
- 1 medium Onion, chopped
- 3 cloves Garlic, minced
- 2 cups Chicken broth
- 1 cup Cream cheese, softened
- 1 cup Shredded cheddar cheese
- ½ cup Jalapeños, chopped (fresh or pickled)
- 1 teaspoon Smoked paprika
- Salt and pepper to taste
Directions:
- Heat the olive oil in a large pot over medium heat.
- Sauté the chopped onion and minced garlic until they become soft and fragrant.
- Add the diced grilled chicken, jalapeños, and smoked paprika, cooking for a few minutes.
- Pour in the chicken broth and bring to a gentle simmer.
- Stir in the softened cream cheese until it’s fully melted and blended.
- Add the shredded cheddar cheese, seasoning with salt and pepper to taste.
- Let the soup simmer for 10 minutes, then serve it hot.
