Smoked Salmon Mozzarella Salad

Ingredients:

2 cups mixed greens (lettuce, arugula, or kale)

100 g (3–4 oz) smoked salmon, sliced

1 cup cherry tomatoes, halved

½ cup blueberries

½ cup blackberries

½ yellow bell pepper, diced

100 g fresh mozzarella balls (bocconcini)

1 tbsp extra virgin olive oil

1 tsp balsamic glaze (or lemon juice)

Salt & freshly ground black pepper, to taste


Instructions:

  1. Arrange mixed greens in a large salad bowl.
  2. Add cherry tomatoes, blueberries, blackberries, bell pepper, and mozzarella balls.
  3. Layer smoked salmon slices on top.
  4. Drizzle with olive oil and balsamic glaze (or lemon juice).
  5. Season with salt and black pepper.
