Shrimp Veggie & Fruit Power Plate


Ingredients:

Main Plate:

5–6 shrimp (boiled or steamed) 🍀

Β½ avocado, sliced πŸ₯‘

Β½ cup broccoli florets πŸ₯¦

Β½ cup green peas

Β½ cup carrots, sliced into sticks πŸ₯•

Β½ cup green beans

2–3 shiitake mushroom slices πŸ„

1 egg, scrambled 🍳

Side Bowl:

½ cup cooked multigrain rice (purple or brown rice mix) 🍚

Fruit Plate:

Β½ cup raspberries πŸ‡

½ cup blueberries 🫐

Β½ cup golden cherry tomatoes πŸ…

ΒΌ avocado, sliced πŸ₯‘

Drink:

1 cup fresh green juice (spinach, cucumber, apple, lemon) πŸ₯’πŸπŸ‹

Instructions:

Cook Shrimp & Veggies: Boil or steam shrimp until pink. Lightly steam broccoli, peas, carrots, and beans until tender but still crisp.

Scramble Egg: Whisk and scramble egg in a non-stick pan until fluffy.

Prepare Rice: Cook multigrain rice ahead of time for a fiber-rich base.

Assemble Main Plate: Arrange shrimp, veggies, avocado, mushrooms, and scrambled egg neatly.

Fruit Plate: Arrange raspberries, blueberries, cherry tomatoes, and avocado slices.

Drink: Blend spinach, cucumber, apple, and lemon into a refreshing green juice
