Sheet Pan Honey Garlic Kielbasa, Potatoes, and Broccoli

Ingredients:

14 oz kielbasa, sliced into 1/2-inch rounds

1 lb baby potatoes, halved

2 cups broccoli florets

2 tbsp olive oil

Salt & black pepper, to taste

For the Honey Garlic Sauce:

1/4 cup honey

2 tbsp soy sauce

2 tbsp Dijon or yellow mustard

3 garlic cloves, minced

1 tsp apple cider vinegar (optional)

Directions:

Preheat Oven:

Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper or foil.

Roast Potatoes:

Toss halved baby potatoes with 1 tbsp olive oil, salt, and pepper. Spread on the sheet pan and roast for 20 minutes.

Prepare Sauce:

In a small bowl, whisk together honey, soy sauce, mustard, garlic, and vinegar.

Add Kielbasa & Broccoli:

After 20 minutes, remove pan from oven. Add sliced kielbasa and broccoli florets. Drizzle remaining 1 tbsp olive oil over broccoli and toss everything gently.

Glaze:

Pour honey garlic sauce over the kielbasa and veggies. Toss lightly to coat.

Roast Again:

Return pan to oven and roast for another 15–18 minutes, or until potatoes are tender and broccoli is roasted to your liking. Stir once halfway through.
