Salmon & Scrambled Egg Toast Plate

1 salmon fillet

2 eggs

3–4 shrimp, peeled

1 slice of sourdough or rustic bread

½ avocado, sliced

Handful of cherry tomatoes, halved

Handful of arugula or mixed greens

Cream cheese (optional topping)

Olive oil, salt, pepper

Instructions:

  1. Toast Bread: Lightly toast the slice of bread.
  2. Scramble Eggs & Shrimp: Sauté shrimp in a pan with olive oil. Add whisked eggs, cook until just set.
  3. Pan-Sear Salmon: Season salmon with salt and pepper. Sear in olive oil, 3–4 min each side until golden and cooked through.
  4. Assemble: On plate, place toast topped with egg + shrimp, seared salmon, avocado slices, salad mix, cherry tomatoes, and a dollop of cream cheese.
  5. Season: Drizzle olive oil over salad and avocado, season everything with salt and pepper.
