4 cups chopped romaine lettuce
2 cups baby spinach or arugula
2 hard-boiled eggs, sliced
1 cup cherry tomatoes, halved
1 avocado, diced
4 strips cooked bacon, chopped
½ cup crumbled blue cheese (or cheddar)
½ cucumber, thinly sliced
2 green onions, sliced
Dressing 🥣
3 tbsp olive oil
1 tbsp red wine vinegar (or balsamic)
1 tsp Dijon mustard
½ garlic clove, minced
Salt & pepper, to taste
Instructions 👩🍳
Prep the greens: Toss romaine and spinach in a large bowl.
Arrange toppings: Neatly line eggs, tomatoes, avocado, bacon, cheese, cucumber, and green onions in rows over the greens.
Make the dressing: Whisk olive oil, vinegar, mustard, garlic, salt, and pepper until smooth.
Serve: Drizzle dressing over salad just before serving and enjoy!
