Ingredients
For the Meatballs :
300g ground beef or lamb
1 small garlic clove, minced
1/4 small red onion, finely chopped
2 tbsp fresh parsley, chopped
1/2 tsp oregano
1/2 tsp cumin
Salt & pepper to taste
1 tbsp olive oil (for cooking)
For the Tzatziki Sauce :
1/2 cup plain Greek yogurt
1/4 cucumber, grated and squeezed dry
1 garlic clove, minced
1 tbsp lemon juice
1 tbsp chopped fresh dill or parsley
Salt to taste
For the Bowl :
1 cup cooked basmati or jasmine rice
1/4 cucumber, sliced
1/2 cup cherry tomatoes, halved
1/4 red onion, thinly sliced
Lemon wedges for serving
Fresh parsley (garnish)
Instructions
In a bowl, combine all meatball ingredients, mix well, and form into small balls. Heat olive oil in a skillet over medium heat and cook the meatballs for about 10–12 minutes until browned and cooked through. For the tzatziki, mix all ingredients in a small bowl until creamy. To assemble, place rice in a bowl, top with meatballs, sliced cucumber, cherry tomatoes, and red onion. Add a generous spoonful of tzatziki, garnish with parsley, and serve with lemon wedges.
