Ingredients (Makes ~12 muffins)
1 lb (450g) ground breakfast sausage (pork, turkey, or chicken)
6 large eggs
1 cup shredded cheddar cheese (or a mix of cheddar + mozzarella for gooey texture)
1/2 cup cottage cheese (adds protein and moisture)
1/4 cup heavy cream (optional, for fluffiness)
1/4 tsp baking powder (helps it rise, optional)
1/4 tsp garlic powder
1/4 tsp onion powder
Salt & pepper to taste
Optional: chopped green onions, jalapeΓ±os, or spinach
Instructions
Preheat oven to 375Β°F (190Β°C). Grease a muffin tin or line with silicone muffin cups.
Cook sausage in a skillet over medium heat until browned and fully cooked. Drain excess grease.
In a large mixing bowl, whisk together eggs, cottage cheese, heavy cream, baking powder, and seasonings.
Stir in cooked sausage and shredded cheese (and any optional add-ins).
Pour mixture evenly into muffin cups (fill about 3/4 full).
Bake for 20β25 minutes until golden on top and set in the middle.
