Ingredients:
2 chicken breasts (grilled & cubed)
1 cup cherry tomatoes (halved)
1 cup cucumber (sliced)
½ cup corn (cooked or canned)
¼ red onion (thinly sliced)
1 avocado (cubed)
2 cups lettuce or mixed greens
Fresh parsley or cilantro (chopped)
Dressing:
3 tbsp olive oil
2 tbsp lemon juice (or lime juice)
1 tsp Dijon mustard
1 tsp honey (optional)
Salt & black pepper to taste
Instructions:
- Season chicken with salt, pepper, and a little olive oil. Grill until golden, then cut into cubes.
- In a large bowl, combine lettuce, cucumber, corn, onion, tomatoes, avocado, and parsley.
- Add grilled chicken on top.
- Whisk dressing ingredients together, drizzle over the salad, and toss lightly.
- Serve immediately and enjoy fresh!
