Grilled Chicken Rainbow Salad

Ingredients:

Grilled chicken breast, sliced

Romaine lettuce, chopped

Purple cabbage, shredded

Cherry tomatoes, halved

Cucumber, sliced

Corn kernels

Green onions, chopped

Sesame seeds

Dressing:

2 tbsp olive oil

1 tbsp soy sauce

1 tsp honey

1 tsp rice vinegar

Salt & pepper to taste

Instructions:

  1. Grill or pan-sear chicken with seasoning of choice. Slice.
  2. Toss all veggies in a large bowl.
  3. Add chicken on top.
  4. Drizzle with dressing, sprinkle sesame seeds, and mix.
