🌟 Ingredients
2 chicken breasts
1 tbsp olive oil
1 tsp smoked paprika
1 tsp garlic powder
Salt & pepper to taste
2 cups fresh arugula
1 ripe avocado, sliced
1 cup fresh pineapple chunks
1 cup cherry tomatoes, halved
🌿 For the Green Dressing
½ cup Greek yogurt
1 tbsp olive oil
1 clove garlic
Juice of ½ lime
Handful of fresh cilantro or parsley
Salt & pepper to taste
🔥 Instructions
1️⃣ Marinate the Chicken
Mix olive oil, smoked paprika, garlic powder, salt, and pepper.
Coat the chicken breasts and let marinate for at least 15–30 minutes.
2️⃣ Grill the Chicken & Pineapple
Preheat a grill or grill pan over medium-high heat.
Grill chicken 5–7 minutes per side until cooked through with nice char marks.
Grill pineapple chunks for 2–3 minutes per side until caramelized.
3️⃣ Prepare the Green Dressing
Blend Greek yogurt, olive oil, garlic, lime juice, and herbs until smooth.
Season with salt and pepper.
4️⃣ Assemble the Bowl
Place a bed of arugula in a large bowl.
Add sliced grilled chicken, avocado, grilled pineapple, and cherry tomatoes.
Drizzle generously with the green dressing.
