Greek Meatball Bowl with Tzatziki, Rice & Veggie Medley

Ingredients

1 lb ground lamb or beef
1/2 cup breadcrumbs
1 egg
1 tablespoon dried oregano
2 garlic cloves, minced
1 teaspoon salt
1/2 teaspoon pepper
1 cup cooked rice
1/2 cucumber, sliced
1/2 red onion, sliced
1/4 cup feta cheese, crumbled
1/2 cup plain Greek yogurt
1/4 cup grated cucumber (squeezed dry)
1 tablespoon lemon juice
1 garlic clove, minced
Salt & pepper to taste

Directions

Preheat your oven to 400°F (200°C). In a large bowl, combine the ground meat, breadcrumbs, egg, dried oregano, minced garlic, salt, and pepper. Mix everything together until just combined, then roll into small meatballs, about the size of a walnut. Place the meatballs onto a baking sheet lined with parchment paper. Bake for 15 to 18 minutes, or until they’re cooked through and golden.

While the meatballs are baking, whip up the tzatziki. In a small bowl, stir together the Greek yogurt, grated and squeezed cucumber, lemon juice, minced garlic, plus a pinch of salt and pepper. Give it a taste and adjust the seasoning if you like.

When the meatballs are ready, it’s time to build your bowls. Start with a hearty scoop of warm cooked rice. Top with the juicy meatballs, then add sliced cucumber and red onion for crunch. Sprinkle on crumbled feta cheese and finish with a generous spoonful of that creamy tzatziki.
