Ingredients:
4 English muffins, split in half
6 large eggs
¼ cup whole milk
½ pound breakfast sausage (pork or turkey)
1 tablespoon unsalted butter (optional, for gravy)
2 tablespoons all-purpose flour
Salt & black pepper, to taste
8 slices mild cheddar cheese (or preferred melty cheese)
Directions:
In a skillet over medium heat, cook sausage until browned and crumbly. Remove most of it with a slotted spoon, reserving about ¼ cup of drippings.
To the reserved drippings, whisk in flour and cook, stirring constantly, until golden and nutty, about 5–7 minutes. Gradually whisk in milk to form a smooth, thick gravy. Season with salt and pepper.
Toast English muffin halves until crisp, using a toaster or under the broiler.
In a nonstick skillet, scramble the eggs with a splash of milk over medium-low heat until soft and fluffy.
Preheat broiler to high. Arrange muffins on a baking sheet. Top each with sausage gravy, scrambled eggs, a slice of cheese, and some reserved cooked sausage.
Broil 1–2 minutes, or until cheese is melted and bubbly. Serve immediately.
