Ingredients:
- 1 cup cherry tomatoes (halved, mix of red and yellow)
- 1 cucumber (thinly sliced)
- 1/4 red onion (thinly sliced)
- 2 tbsp chopped parsley
- 1 tbsp olive oil
- 1 tbsp red wine vinegar or lemon juice
- Salt, black pepper, and chili flakes to taste
Instructions:
- Combine tomatoes, cucumber, and red onion in a bowl.
- Add parsley, olive oil, vinegar or lemon juice.
- Season with salt, pepper, and chili flakes.
- Toss well and serve chilled.
