Cucumber Tomato Salad

Ingredients:

  • 1 cup cherry tomatoes (halved, mix of red and yellow)
  • 1 cucumber (thinly sliced)
  • 1/4 red onion (thinly sliced)
  • 2 tbsp chopped parsley
  • 1 tbsp olive oil
  • 1 tbsp red wine vinegar or lemon juice
  • Salt, black pepper, and chili flakes to taste

Instructions:

  1. Combine tomatoes, cucumber, and red onion in a bowl.
  2. Add parsley, olive oil, vinegar or lemon juice.
  3. Season with salt, pepper, and chili flakes.
  4. Toss well and serve chilled.
