Ingredients:
2½ cups chopped broccoli florets
2 cups shredded cheddar cheese
1½ cups chicken broth
¼ cup unsalted butter
½ cup diced onions
1 cup shredded carrots
1 cup heavy whipping cream
1 cup skim or fat-free milk
¼ cup all-purpose flour
Salt and pepper to taste
Preparation:
In a large pot, melt butter over medium heat. Sauté onions and carrots until softened.
Stir in flour and cook 1–2 minutes to form a roux.
Gradually whisk in chicken broth, milk, and cream until smooth.
Add broccoli, bring to a simmer, and cook until tender, about 10–15 minutes.
Stir in cheddar cheese, salt, and pepper. Simmer until melted and creamy.
