Colorful Healthy Breakfast or Lunch Bowl

Ingredients:

2 fried eggs

½ avocado, sliced

½ cup cooked corn

A handful of blueberries

A handful of cherry tomatoes, halved

A handful of baby greens (spinach or arugula)

2 slices of toasted bread

Salt & black pepper to taste

Instructions:

Fry the eggs in a non-stick pan with a pinch of salt and pepper. Keep the yolk runny or cooked as you prefer.

Prepare the veggies and fruits: slice the avocado, cut the cherry tomatoes, and have the blueberries and corn ready.

Arrange everything in a bowl or on a plate: greens, tomatoes, corn, blueberries, avocado, and the eggs. Add the toast on the side.

Sprinkle a little more black pepper or your favorite seasoning on top. Enjoy!
