Baked Zucchini & Veggies

A colorful and healthy side dish featuring a medley of fresh vegetables, roasted to perfection with a touch of balsamic vinegar and thyme.

Ingredients:

1 zucchini (sliced and quartered)

1 yellow squash (sliced and quartered)

2 cups broccoli (cut into florets)

1/2 red onion (chopped)

1 bell pepper (chopped)

5 oz mushrooms (halved or quartered)

2 tbsp balsamic vinegar

2 tbsp avocado oil

1 1/4 tsp thyme

Salt and pepper, to taste

Directions:

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

Prepare the Vegetables: In a large mixing bowl, combine the zucchini, yellow squash, broccoli, red onion, bell pepper, and mushrooms.

Season the Veggies: Drizzle the balsamic vinegar and avocado oil over the vegetables. Sprinkle with thyme, salt, and pepper. Toss everything together until the veggies are evenly coated.

Bake the Veggies: Spread the vegetable mixture evenly on the prepared baking sheet. Bake for 20-25 minutes, or until the vegetables are tender and slightly caramelized, stirring halfway through.

Serve: Remove from the oven and let cool slightly before serving. Enjoy this vibrant and nutritious dish as a perfect side for any meal!
