Ingredients:
2 medium zucchinis, thinly sliced
1 ripe avocado, sliced
1 small red chili, thinly sliced (adjust to taste)
A handful of fresh mint leaves, chopped
2 tbsp olive oil
1 tbsp lime or lemon juice
1 tsp honey or agave (optional, for balance)
Salt & black pepper, to taste
Instructions:
Prep the base: Slice zucchinis into thin half-moons or ribbons. Slice avocado into wedges.
Make the dressing: In a small bowl, whisk together olive oil, lime juice, honey (if using), salt, and pepper.
Combine: Toss zucchini, avocado, chili, and mint in a mixing bowl.
Serve: Drizzle dressing over the top, toss gently to coat, and garnish with extra mint.
