Creamy Berry Coconut Ice Cream (Scoopable & Dreamy!)

Rich, velvety, and bursting with berry flavor! This homemade ice cream is ultra-creamy, perfectly scoopable, and melts just like the real thing 😍🍨

🛒 Ingredients

2 cups frozen mixed berries
1 cup full-fat coconut milk
1/2 cup heavy cream (key for creaminess!)
1/3 cup honey or sugar
1 tsp vanilla extract
Pinch of salt

👩‍🍳 Instructions

  1. Blend
    Blend berries, coconut milk, heavy cream, honey, vanilla, and salt until completely smooth.
  2. Chill
    Refrigerate mixture for 1 hour (this improves texture BIG time).
  3. Freeze properly
    Option A (BEST):
    Pour into ice cream maker and churn according to instructions.

Option B (no machine):
Pour into a container → freeze 4–6 hours.
Stir every 30–45 minutes for first 2 hours to break ice crystals.

  1. Final freeze
    Freeze until firm and scoopable (about 6 hours total).
  2. Serve
    Let sit 3–5 minutes before scooping for perfect texture.
