Creamy Chicken and Carrot Spread – A Hidden Gem You’ll Want to Save

Ingredients
250 g (about 9 oz) cooked chicken breast
1 medium carrot, finely grated or cooked & mashed
100 g (7 tbsp) cream cheese or soft butter
2–3 tbsp mayonnaise
1 small garlic clove, finely minced (optional)
2 tbsp fresh parsley or dill, finely chopped
Salt, to taste
Black pepper, to taste
A squeeze of lemon juice (optional, but lovely)
Instructions
Prepare the chicken
Finely shred or pulse the cooked chicken in a food processor until soft and fluffy.
Add the carrot
If using raw carrot, grate it very finely. For extra smoothness, lightly cook it first and mash.
Mix the creamy base
Add cream cheese (or butter), mayonnaise, garlic, herbs, salt, and pepper.
Blend or mix
Blend until smooth or mix by hand for a slightly textured spread.
Taste & adjust
Add lemon juice if you want a fresh kick. Chill for 20–30 minutes for best flavor.
