Stir in the garlic and cook for 30 seconds.If there is excess grease, drain some off.Add the red onion and zucchini. Cook for 4 to 5 minutes until slightly softened.Add the cherry tomatoes and a splash of beef broth or water. Cook another 3 to 4 minutes, just until the tomatoes begin to soften but still hold shape.Turn off the heat.
