Prepare the potatoesPlace diced potatoes into a bowl.Add egg, flour, black pepper, paprika, and a pinch of salt.Mix well so the potatoes are coated in the seasoned mixture.2. Pan-fry the potatoesHeat a generous amount of vegetable oil in a deep skillet.Add the coated potatoes.Fry on medium-high heat for 8–10 minutes, stirring occasionally, until lightly golden.Remove from pan and set aside.3. Sauté the vegetablesIn the same pan (add a little more oil if needed), sauté:OnionRed bell pepperCarrotfor 4–5 minutes until softened.Add garlic and cook 30 seconds.4. Add sauce ingredientsStir in:Tomato pasteSoy sauceWaterMix and cook 1–2 minutes to blend flavors.5. Add cream & cheesesReduce heat to medium-low.Pour in the cream and stir.Add half the mozzarella and half the hard cheese.Let the sauce gently simmer until cheese melts and thickens (2–3 minutes).6. Bring it all togetherAdd the fried potatoes back into the skillet.Stir so they’re fully coated in the creamy sauce.Sprinkle the remaining cheeses on top.Cover with a lid and cook on low for 5 minutes to melt the cheese.7.
