Oatmeal Apple & Carrot Bake


Ingredients

2 cups (200 g) rolled oats, blended into coarse flour

1 tsp baking powder

1 cup (240 ml) milk of your choice (dairy or plant-based)

1 medium carrot, grated

1 apple, grated (any sweet variety)

9 dried apricots, rinsed with hot water & chopped

4 tbsp raisins, rinsed with hot water

Instructions

Preheat oven
Preheat to 180°C (350°F). Lightly grease or line a baking dish.

Mix dry ingredients
In a bowl, combine blended oats and baking powder.

Add wet ingredients
Stir in milk, grated carrot, grated apple, chopped apricots, and raisins.
Mix until well combined.

Rest batter
Let the mixture sit for 5–10 minutes so the oats absorb the liquid.

Bake
Pour into prepared dish and smooth the top.
Bake for 35–40 minutes, until set and lightly golden.

Cool & serve
Let cool slightly before slicing. Serve warm or chilled.
