Pistachio Bundt Cake with Creamy Pistachio Glaze

Ingredients

Cake

  • 1 box white or vanilla cake mix
  • 1 box instant pistachio pudding mix (3.4 oz / 96 g)
  • eggs
  • ½ cup vegetable oil
  • ¾ cup milk
  • ½ tsp almond extract (key flavor!)
  • ½ cup finely chopped pistachios
  • Optional: a drop of green food coloring (for vibrant color)

🍰 Instructions

1. Preheat

Oven to 350°F (175°C).
Grease a bundt pan VERY well.

2. Mix

In a large bowl, beat:

  • cake mix
  • pistachio pudding mix
  • eggs
  • oil
  • milk
  • almond extract

Mix until smooth.
Fold in chopped pistachios.

3. Bake

Pour batter into pan.
Bake 45–50 minutes, until a toothpick comes out clean.

Cool 15 minutes, then invert onto a plate. Cool completely.


🍯 Pistachio Glaze

Ingredients

  • 1½ cups powdered sugar
  • 3–4 tbsp milk or heavy cream
  • 2 tbsp pistachio pudding mix
  • ¼ tsp almond extract

Instructions

Whisk until thick but pourable.

Pour over cooled cake and let drip naturally.
