Avocado Sunny Side Up Egg Toast Bowl

Ingredients (1 serving):

1 slice whole-grain or sourdough bread (toasted)

1 ripe avocado (sliced)

1 egg (fried sunny-side up)

½ cup fresh blueberries

6–8 cherry tomatoes (halved)

1 cup fresh spinach (lightly sautéed or steamed)

1 tsp sesame seeds

Salt & black pepper to taste


Instructions:

  1. Toast the bread until golden and crispy.
  2. Fry the egg sunny-side up with a little olive oil until whites are set but yolk is runny.
  3. Prepare toppings – slice avocado, halve cherry tomatoes, and sauté spinach with a pinch of salt.
  4. Assemble the bowl – place toast at the base, top with avocado slices and fried egg. Add spinach, tomatoes, and blueberries on the side.
  5. Season & garnish – sprinkle with sesame seeds, salt, and freshly ground black pepper.
