Grilled Chicken Salad with Corn Cucumber

Ingredients:

2 chicken breasts (grilled & cubed)

1 cup cherry tomatoes (halved)

1 cup cucumber (sliced)

½ cup corn (cooked or canned)

¼ red onion (thinly sliced)

1 avocado (cubed)

2 cups lettuce or mixed greens

Fresh parsley or cilantro (chopped)

Dressing:

3 tbsp olive oil

2 tbsp lemon juice (or lime juice)

1 tsp Dijon mustard

1 tsp honey (optional)

Salt & black pepper to taste

Instructions:

  1. Season chicken with salt, pepper, and a little olive oil. Grill until golden, then cut into cubes.
  2. In a large bowl, combine lettuce, cucumber, corn, onion, tomatoes, avocado, and parsley.
  3. Add grilled chicken on top.
  4. Whisk dressing ingredients together, drizzle over the salad, and toss lightly.
  5. Serve immediately and enjoy fresh!
