Ingredients:
1 large egg
1 cup cherry tomatoes, halved
1 small bunch asparagus, trimmed
½ avocado, sliced
½ cup cooked white beans
1 tbsp olive oil
1 tsp balsamic vinegar (optional)
Fresh herbs (parsley, chives, or basil), chopped
Salt & black pepper, to taste
Instructions:
- Roast veggies: Toss asparagus and cherry tomatoes with olive oil, salt, and pepper. Roast at 400°F (200°C) for 12–15 minutes until tender.
- Cook egg: In a skillet, fry the egg sunny-side up (or your preferred style).
- Assemble plate: Arrange roasted asparagus, tomatoes, avocado slices, and cooked white beans on a plate. Top with the fried egg.
- Finish: Drizzle with olive oil or balsamic vinegar. Garnish with fresh herbs and a sprinkle of black pepper.
