Ingredients:
2 cups mixed greens (lettuce, arugula, or kale)
100 g (3–4 oz) smoked salmon, sliced
1 cup cherry tomatoes, halved
½ cup blueberries
½ cup blackberries
½ yellow bell pepper, diced
100 g fresh mozzarella balls (bocconcini)
1 tbsp extra virgin olive oil
1 tsp balsamic glaze (or lemon juice)
Salt & freshly ground black pepper, to taste
Instructions:
- Arrange mixed greens in a large salad bowl.
- Add cherry tomatoes, blueberries, blackberries, bell pepper, and mozzarella balls.
- Layer smoked salmon slices on top.
- Drizzle with olive oil and balsamic glaze (or lemon juice).
- Season with salt and black pepper.
