Grilled Herb Chicken


Ingredients:
2 pounds boneless, skinless chicken breasts
1/4 cup olive oil
2 tablespoons fresh lemon juice
4 cloves garlic, minced
1 tablespoon fresh rosemary, chopped
1 tablespoon fresh thyme, chopped
1 tablespoon fresh parsley, chopped
1 teaspoon salt
1/2 teaspoon black pepper

  1. In a large bowl, whisk together the olive oil, lemon juice, minced garlic, rosemary, thyme, parsley, salt, and black pepper to create a marinade.
  2. Add the chicken breasts to the marinade, ensuring they are well coated. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, or up to 4 hours for more flavor.
  3. Preheat your grill to medium-high heat.
  4. Remove the chicken from the marinade and let any excess drip off. Discard the remaining marinade.
  5. Place the chicken on the grill and cook for 6-7 minutes on each side, or until the internal temperature reaches 165°F.
  6. Once cooked, remove the chicken from the grill and let it rest for 5 minutes before slicing.

For a smoky flavor, try adding 1 teaspoon of smoked paprika to the marinade.
