Fresh Avocado & Egg Salad Bowl

Ingredients:

2 cups mixed greens

½ avocado, sliced

2 boiled eggs, halved

1 cup cherry tomatoes, halved

½ red onion, finely chopped

1 cup corn kernels (cooked or canned)

¼ cup crumbled feta cheese

Fresh cilantro leaves

Pinch of chili powder or paprika

Drizzle of lemon juice & olive oil

Method:
Place greens in a large bowl as your base.
Add avocado slices, eggs, tomatoes, onions, corn, and feta.
Sprinkle with cilantro and a touch of paprika.
Drizzle lemon juice + olive oil for freshness.
Toss gently & enjoy this protein-packed, colorful bowl
