Protein Chicken Avocado Salad Bowl

Ingredients:

1 grilled chicken breast, sliced 🍗

2 boiled eggs, halved 🥚

1 ripe avocado, sliced 🥑

1 cup cherry tomatoes, halved 🍅

½ cup cucumber slices 🥒

½ cup green & black olives 🫒

2 cups fresh lettuce or mixed greens 🥬

Salt & black pepper to taste

Dressing:

2 tbsp olive oil 🫒

1 tbsp lemon juice 🍋

1 tsp Dijon mustard

½ tsp honey (optional)

Instructions:

Prep the base: Arrange lettuce or greens in a bowl.

Add toppings: Place grilled chicken, boiled eggs, avocado, cucumbers, tomatoes, and olives neatly around the bowl.

Make dressing: Whisk olive oil, lemon juice, mustard, and honey until smooth.

Finish & serve: Drizzle dressing over the salad, season with salt and pepper, and enjoy!
