Grilled Salmon Avocado Strawberry SaladIngredients

2 salmon fillets, skin removed

1 tbsp olive oil

1 tsp garlic powder

Salt & black pepper, to taste

4 cups mixed salad greens (lettuce, spinach, arugula)

1 avocado, sliced

1 cup fresh strawberries, halved

2 tbsp fresh parsley, chopped

For the Dressing:

3 tbsp olive oil

1 tbsp balsamic vinegar (or lemon juice for a brighter taste)

1 tsp honey or maple syrup

1 tsp Dijon mustard

Salt & pepper, to taste

Method:

Prepare the salmon: Rub salmon fillets with olive oil, garlic powder, salt, and black pepper.

Grill: Cook on a grill pan or outdoor grill for 3–4 minutes per side, until golden and cooked through. Let rest, then cut into bite-sized chunks.

Make the dressing: Whisk together olive oil, balsamic vinegar, honey, Dijon mustard, salt, and pepper until smooth.

Assemble the salad: In a large bowl, arrange salad greens, avocado slices, and strawberries. Add grilled salmon pieces on top.

Finish & serve: Drizzle with the dressing, sprinkle fresh parsley, and enjoy immediately.
