Ingredients:
For the Fish:
4 white fish fillets (cod, tilapia, snapper)
Salt & pepper, to taste
Zest of 1 lime
Juice of 2 limes
½ cup coconut milk (full fat, unsweetened)
2 tbsp olive oil
2 garlic cloves, minced
¼ tsp red pepper flakes (optional)
Fresh cilantro, chopped (for garnish)
For the Avocado Salsa:
1 large avocado, diced
½ cup cherry tomatoes, quartered
¼ cup red onion, finely diced
Juice of 1 lime
Salt & pepper, to taste
Fresh cilantro, chopped
Instructions:
Marinate fish with lime zest, lime juice, coconut milk, olive oil, garlic, red pepper flakes, salt & pepper. Chill 15–20 min.
Mix avocado, tomatoes, onion, lime juice, cilantro, salt & pepper in a bowl; toss gently.
Heat skillet medium; cook fish 3–4 min each side until opaque and flaky.
Serve fish topped with avocado salsa; garnish with cilantro & lime wedges.
