Mediterranean Nacho Flatbreads with Olives & Feta

Ingredients

2 large flatbreads or naan

½ cup hummus

½ cup crumbled feta cheese

¼ cup sliced Kalamata olives

½ cup cherry tomatoes, halved

¼ red onion, thinly sliced

½ cucumber, diced

2 tbsp chopped fresh parsley

Optional: chili flakes, lemon wedges, tzatziki or yogurt drizzle

Directions

Preheat oven to 200°C (400°F).

Place flatbreads on a baking sheet and toast for 5–7 minutes until slightly crisp.

Spread a generous layer of hummus on each warm flatbread.

Top evenly with feta, olives, cherry tomatoes, red onion, and cucumber.

Return to the oven for 2–3 minutes just to warm everything through, or serve as-is for a fresher bite.

Garnish with parsley and optional chili flakes. Serve with lemon wedges or a drizzle of tzatziki/yogurt.
