Mediterranean Garden Salad Bowl

Ingredients

For the Salad Base:

  • 6 cups mixed greens (arugula, spinach, or spring mix)
  • 1 cup cherry tomatoes (red and yellow), halved
  • 1 cucumber, sliced into rounds
  • 1/2 red onion, thinly sliced
  • 1 cup fresh mozzarella balls (bocconcini), halved
  • 1/2 cup corn kernels (fresh or grilled)
  • 1/4 cup fresh basil leaves

For the Herbed Croutons:

  • 4 slices day-old bread, cubed
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh herbs (thyme, oregano, or Italian seasoning)
  • Salt and pepper to taste For the Dressing:
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced
  • 1 teaspoon honey
  • Salt and freshly cracked black pepper

Instructions

Prepare the Croutons:

  1. Preheat oven to 375°F (190°C)
  2. Toss bread cubes with olive oil, minced garlic, herbs, salt, and pepper
  3. Spread on a baking sheet and bake for 12-15 minutes until golden and crispy
  4. Set aside to cool

Make the Dressing:

  1. In a small bowl, whisk together olive oil, balsamic vinegar, lemon juice, Dijon mustard, minced garlic, and honey
  2. Season with salt and pepper to taste

  4. In a large salad bowl, arrange the mixed greens as the base
  5. Artfully arrange the cherry tomatoes, cucumber slices, and red onion around the bowl
