Grilled Chicken & Avocado Bowl Recipe


Ingredients:
2 boneless, skinless chicken breasts

1 tbsp olive oil

1 tsp smoked paprika

1 tsp garlic powder

1/2 tsp salt

1/2 tsp black pepper

4 cups mixed greens (lettuce, spinach, etc.)

1 ripe avocado, sliced

1 cup cherry tomatoes, halved

1/2 cup diced yellow bell pepper

1/4 cup thinly sliced red onion

1/2 cup crumbled blue cheese or feta

Fresh cilantro or parsley, chopped (for garnish)

🔥 For the dressing (optional):
3 tbsp olive oil

1 tbsp lemon juice

1 tsp Dijon mustard

Salt & pepper to taste

👩‍🍳 Instructions:
1️⃣ Marinate the chicken:
Mix olive oil, smoked paprika, garlic powder, salt, and pepper. Rub over chicken breasts and let sit for 10–15 minutes.

2️⃣ Grill:
Heat a grill or skillet over medium-high heat. Cook chicken 5–6 minutes per side until cooked through and nicely charred. Let it rest 5 minutes, then slice.

3️⃣ Prepare the salad base:
In a large bowl, arrange mixed greens. Top with sliced avocado, cherry tomatoes, yellow bell pepper, and red onion.

4️⃣ Add cheese:
Sprinkle crumbled blue cheese or feta over the salad.

5️⃣ Assemble:
Add the sliced grilled chicken on top. Garnish with fresh cilantro or parsley.

6️⃣ Dressing:
Whisk olive oil, lemon juice, mustard, salt, and pepper. Drizzle over the bowl.
